Responsibilities
- Conduct regular review on food cover report, revenue journal and distribution to Outlet Mangers and management
- Ensure controls are in place for dockets used in all outlets, maintaining correct sequence used at all times, accounting for dockets and making sure canceled dockets are recorded accordingly
- Ensure controls are in place for all food and beverage sales by:
- Correct recording of guest checks on a timely basis
- Performs spot checks on outlet checks used
- Having all voided checks, corrections and unsettled checks approved by the Restaurant Supervisor or Manager
- Monitors the buffet controls, especially over cash settled checks to prevent reuse ensuring all revenue is recorded
- Ensure banquet controls are being adhered to
- Reconciles total outlet sales to total charges
- Check on daily basis summary of rebate, miscellaneous charges and paid outs
- Ensures that programs involving coupons, certificates, and vouchers are adequately controlled and safeguards are in place
- Ensure list of valid discount scheme applicable in the hotel is updated and monitor the implementation in the outlet
- Review the audits daily collection of the General Cashiers Summary against the bank in slip
- Audits and reconciles advance payments and ensures payments have been applied
- Review reguar checking of all float together with General Cashier to and keeps control on registers in outlets
- Ensure various audit procedures (daily, weekly, monthly, quarterly) take place including price check, open table test.
- Final check calculation of front office upsell incentive and spa incentive
- Ensure revenues reconciliation on a daily basis and daily revenue report to be distributed timely on daily basis
- Bachelor Degree Certificate in Accounting or related field
- A minimum experience of 2 years in the similar role
- Must be flexible in working hours subject to season and occupancy
- Demonstrated ability to interact with customers, employees and third parties that reflects highly on the hotel, the brand and the Company.
- Proficient in the use of Microsoft Office
- Good writing skills
